The term "gluten-free" has evolved from a medical necessity to a lifestyle choice. Initially adopted to treat celiac disease—an autoimmune disorder triggered by gluten—this dietary approach is now embraced by many. High-profile endorsements, like that of a globally renowned tennis player who improved their health through a gluten-free diet, have only increased in popularity. A gluten-free lifestyle can offer numerous health benefits, from improved gut health and skin conditions to alleviated symptoms like fatigue and malaise.
We've focused on one of Japan's most beloved culinary exports—ramen. Our gluten-free noodles are crafted from rice flour and bring a unique twist to the traditional dish. You might wonder, "Is this just like rice vermicelli?" The answer is a resounding no. The secret is "kansui," an alkaline salt that gives our noodles the authentic ramen texture and flavor.
Our noodles are produced in a dedicated facility that's 100% wheat-free. We adhere to stringent gluten-free standards, exceeding the international norm of 20ppm (parts per million) to meet the Gluten-Free Certification Organization (GFCO) standard of 10ppm or less. Our internal quality checks ensure a gluten content of less than 2 ppm.
Our culinary adventure began in Hawaii in 2014 and led us to the mainland United States in 2016. In April 2018, we proudly opened "Tsurumen Davis" in Boston. While running our ramen shops, we often heard the same question from our customers: "Do you offer gluten-free options?" This sparked our curiosity and led us to investigate why gluten-free ramen was not more prevalent, especially in Japan. What we found was a higher-than-expected number of individuals with celiac disease.
As a firm believer in the power of delicious food to bring happiness, I felt a strong calling to develop gluten-free ramen. Partnering with "Kenmin Foods," known for their 100% rice vermicelli, I founded GF RAMEN LAB with a singular focus: to create exceptional gluten-free ramen.
